How to Make Cheesy chicken/Broccoli/Mushroom Casserole
- Chop chicken, broccoli, onion, garlic and grate the velvetta and set aside. Crush the tube of crackers very fine and set aside for later.
- Melt 1 stick oleo in skillet and add chicken. Cook until almost done then add the onion, garlic, mushrooms, and broccoli. Cook this about 10 minutes, then pour into a large casserole dish.
- In bowl, mix the velvetta that has been grated, the mushroom soup and the 2 eggs beaten and mix. Pour this mixture over the mean and veggies in your casserole and smooth the top.
- Melt the second stick of oleo and pour over the dish then top with the cracker crumbs evenly to make a crust. Bake at 375 for about 1 hour or until toasty brown on top.
