- 4 - skinless boneless chicken breasts
- 2 ounces cheese (monterey jack or provolone)
- 1 large egg
- 1/3 cup italian bread crumbs
- 2 tablespoons parmesan cheese
- 2 tablespoons parsley
- 1/2 teaspoon salt
- - pepper
- 1 tablespoon olive oil

Step 1PREHEAT OVEN TO 400º. USING A SMALL SHARP KNIFE, BUTERFLY EACH CHICKEN BREAST. PLACE A SLICE OF CHEESE ON ONE SIDE. PRESS THE OTHER SIDE OVER TO ENCLOSE THE CHEESE.

Step 2BEAT EGG IN A SMALL SHALLOW BOWL.

Step 3COMBINE BREADCRUMBS PARMESIAN CHEESE, PARSLEY, SALT AND PEPPER. DIP BREAST IN EGG, THEN IN BREADCRUMBS.

Step 4HEAT OIL (OR PAM) IN LARGE CAST IRON SKILLET UNTIL VERY HOT. ADD BREASTS CAREFULLY & BROWN WELL ON ONE SIDE (ABOUT 2 MINUTES) THEN PLACE SKILLET IN OVEN.

Step 5BAKE UNTIL CHEESE CHICKEN IS NO LONGER PINK INSIDE. (ABOUT 20 MINUTES)
