So glad I found this recipe. This is my husband's favorite entree' at Carrabba's. I can't wait to make it for him. Sliced French Bread, twice baked potatoes & fresh broccoli on the side.

Ingredients

  • 4 - chicken breasts, boneless and skinless
  • - salt & pepper to taste
  • 8 ounces goat cheese
  • 8 tablespoons butter
  • 3/4 cup dry white wine
  • 2 tablespoons lemon juice
  • 1/4 cup white onions, chopped
  • 2 tablespoons chopped garlic
  • 2 tablespoons basil, sliced thin
  • 2 tablespoons sun dried tomatoes

How To Make carrabba's chicken brian-copycat

  • Step 1
    Prepare chicken by wrapping in plastic wrap. Pound out till thin. Brush olive oil on each side. Salt & pepper to taste. Grill 3-4 minutes on each side. Transfer to plate and cover with plastic wrap.
  • Step 2
    Sauce:saute onion and garlic in tbsp of butter. Cook onions till transparent and garlic fragrant. Add wine & lemon juice to pan , and cook wine till reduced to half, by simmering the wine gently. When wine has been reduced to half, add in 3 tbsp of cold butter, whisk until butter as melted completely. Turn burner off and add the rest of the butter, whisk in. strain the sauce and add in 1/2 of the basil, and add sun dried tomatoes.
  • Step 3
    To Arrange: Place a chicken breast with a slice of goat cheese (room temp). Pour sauce over chicken and sprinkle the remaining basil on top.
