This is a nice refreshing cold salad, but yo can have it arm too. This make me wish i was on the Caribbean sipping s nice cold drink and basting in the sun. But , until then m apt patio will have to do.lol :)

Ingredients

  • 2 small
    sweet potato, peeled and chopped
  • 1 can(s)
    pineapple chucks, drained
  • 1
    rotisserie chicken, boned and chopped
  • 1
    red bell pepper
  • 2
    scallions, thinly sliced
  • 3 Tbsp
    low-fat raspberry vinaigrette

How to Make Caribbean Chicken And Sweet Potato Salad

Step-by-Step

  1. Bring the potatoes in a lightly salted water to a boil in a large saucepan. Reduce the heat and simmer until potatoes are fork-tender, 10-12 minutes.Drain and transfer to a large bowl and let cool 10 minutes.
  2. Meanwhile,remove the meat from the bones of the chicken and chop.
  3. Add the chicken , pineapple, bell pepper and scallions to he potatoes; mix well. Add the vinaigrette and toss gently to coat.
