A great, quick recipe to use up leftover chicken ... and get the kids to eat their veggies~!

Ingredients

  • 1 (16oz) bag california vegetable mix, thawed. (cali mix is broccoli, cauliflower and carrots.)
  • 2 cups cooked diced chicken
  • 1 (4oz) can mushrooms
  • 1/2 can french's fried onions
  • 1/4 cup mayonaisse (i use light; or greek yogurt would work if you prefer)
  • 1/8 teaspoon garlic powder
  • 6 ounces swiss cheese, shredded
  • - salt & pepper to your taste

How To Make california chicken casserole

  • Step 1
    Place all ingredients in a greased 9 inch square baking dish. Mix well. Bake, covered, at 350 for 40 minutes. Uncover and bake an additional 10 minutes until brown and bubbly. Enjoy :) This recipe can be easily doubled for a crowd, just be sure to allow for additional cooking time.
