Ingredients

  • 1 can 16 oz can of diced tomatoes and peppers
  • 3/4 cup shredded mozzarella cheese
  • 1 ounce chopped fresh basil (1/2 c)
  • 5 - boneless skinless chicken breasts (or thighs)
  • 1 can 8 oz tomato sauce
  • 1 quart fresh plum tomatoes sliced in 1/2
  • 6 cloves garlic - diced very fine
  • 1 can small - diced black olives
  • - freshly grated parmigiana - to taste
  • - panko breadcrumbs to dredge chicken

How To Make bruschetta chicken skillet

  • Step 1
    pound your boned chicken to 1/2 inch thickness
  • Step 2
    dredge in panko breadcrumbs after seasoning with salt and pepper to taste
  • Step 3
    heat a large sized skillet and brown chicken on both sides along with the diced garlic
  • Step 4
    stir together the canned tomatoes with the basil
  • Step 5
    Layer your chicken into a 13 x 9 inch pan and pour the tomato sauce over top
  • Step 6
    cover with grated mozzarella and top with black olives (or can omit olives if they're not your thing) - cover with fresh tomatoes - bake at 350 degrees until the cheese melts - serve with pasta of choice and a side salad.
  • Step 7
    all you need now is a nice wine for your meal
