Ingredients
- 2 pounds chicken
- 2 cups water
- 1 teaspoon salt
- 1/2 cup lima beans - cooked
- 1/2 cup corn
- 1/4 pound bacon, diced
- 1/2 cup potatoes, diced
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 1/2 cup canned tomatoes, cut up
- 1/4 cup barley
- 1/2 cup okra
- 2 tablespoons butter, cut in pieces
- 2 tablespoons flour
How To Make brunswick stew

Step 1Wash chicken and cut into serving pieces. Place chicken in pressure cooker with water, salt. Put lid on cooker and put over medium-high heat. Bring contents to boil. (Allow steam to begin to flow from vent pipe to release all air from cooker.) Place indicator weight on vent pipe and cook 20 minutes with stem at cook position. Remove from heat and let vent pipe release the steam. Remove cover. Remove chicken pieces, let cool slightly then remove meat from bones and skin.

Step 2Put meat back in the pressure cooker (with the liquid it was cooked in). Add lima beans, corn, diced bacon potatoes, pepper, sugar, canned tomatoes, barley and okra. Put back over very low heat without lid and cook 2-3 hours, stirring occasionally. Just before serving, roll pieces of butter in flour and add to stew, stirring until stew thickens. Serve and enjoy.
