I found this recipe on Bigoven.com via Pinterest & it is AWESOME. It's pretty quick & easy too. It's like teriyaki chicken, but different & my family thinks it's even better. I serve this over brown rice & sometimes add some peas to the rice. I also double the sauce, as we like lots of sauce for the rice, but you have to be really careful because too much sauce is over powering in flavor. You have to put just enough to coat the rice lightly.

Ingredients
- 3 pounds boneless chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 - garlic cloves, crushed
- 1/2 teaspoon ginger
- 2 tablespoons cornstarch
- 1 teaspoon red pepper flakes
- 1/2 cup apple juice
- 4 tablespoons ketchup
- 2/3 cup light brown sugar
- 2 tablespoons apple cider vinegar
- 2/3 cup soy sauce
- 1 cup water
How To Make bourbon street chicken

Step 1Heat oil in skillet & add chicken. Cook over medium heat until browned. Remove chicken from skillet & add remaining ingredients, heating over medium heat until well blended & dissolved. Add chicken back to skillet & bring to a hard boil until sauce is thickened. Serve over rice.
