bob's honey roasted peanut crusted chicken
Got this from a BBQ Pit cook book. My family loves it. And I think you will to. I have a Rivle Crock Pot BBQ pit roaster to cook this in.

Ingredients
- 3 to 4 pounds whole chicken
- 2 teaspoons peanut oil
- 3/4 cup honey roasted peanuts,chopped.
- 3/4 cup honey
- 2 teaspoons soy sauce, low sodium
- 2 teaspoons teriyaki sauce
- 2 teaspoons hoisin sauce
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon cayenne pepper.
How To Make bob's honey roasted peanut crusted chicken

Step 1Rinse and pat dry the chicken.Season with salt and pepper. In a mixing bowl combine peanut oil,1 tsp soy sauce,1 tsp teriyaki sauce,1 tsp hoisin sauce,2 tsp honey. Wisk to mix very well. With a brush take mixture and brush all over the bird.

Step 2Put chicken on the rack in the Roster and cook on high for 3 to 4 hours..Meat thermometer should read 180.

Step 3While chicken is cooking add the remaing ingredients(except chopped peanuts), to a sauce pan.Heat gently while stiring to melt honey with the rest of the ingredients..

Step 4Remove chicken from roster and place on a plater. Let sit for 10 to 15 minutes.Pour honey mix over the chicken and sprinkle chopped peanuts over the bird. I serve this with rice cooked in chicken stock.
