With a lot of tomatoes and onions coming out of the garden. I came up with this. It turned out so very good.

Ingredients
- 1 3LB - whole chicken cut up.
- 3 slices hickory bacon,
- 1/2 cup olive oil, light
- 1 16 ounces caned tomatoes.,undrained, or 3 large fresh tomatoes cut up.
- 1 medium onion minced.
- 2 cloves garlic, minced.
- 1 tablespoon thyme, oregano, and rosemary..
- 1 teaspoon cinnamon
- 1/2 teaspoon cumin
- 3 tablespoons whiskey
- 1 pound orzo pasta
- 1/3 cup vegetable oil
- 1 cup greated colby jack cheese.
- - salt and pepper, to taste

Step 1In a dutch oven add a little olive oil and cook bacon till chrisp. Remove with a slotted spoon. And crumble. add the rest of the olive oil. Pat chicken dry. salt and pepper chicken pieces. Add to oil and cook browning on all sides.

Step 2Mash tomatoes and add to pot. Add Thyme, oregano, rosemary, onion, garlic, cinnamon, bacon, whisky, and cumin. Cover and simmer about 30 minutes.

Step 3Wile chicken is cooking. Cook orzo according to package. Adding oil to the pot.. After chicken is cooked. Remove from pot and keep warm. After orzo has cooked. Drain reel well. add to a very large deep serving dish Add sauce from Dutch oven and toss till orzo is coated. add salt and pepper to taste. Ad chicken pieces and toss again to coat every thing,.. Serve hot..
