I first saw this in a news paper. After I made it I felt like some thing was missing. So I redid this with some changes to it.. Now I am happy with it. The boys and the people at the church dinner loved it..

Ingredients
- 1 1/2 pounds chicken breasts
- 2 cups chicken broth, low salt
- 1 cup white wine, medium
- 8 oz - frozen corn
- 1 can roltel undrained.
- 1/4 cup chopped cilantro
- 3-4 - scallions. chopped
- 1 teaspoon each, basil,thyme, cumin,and black pepper.
- 1 teaspoon garlic powder,and onion powder.
- 1/2 teaspoon salt

Step 1in a crockpot, I used a 7qt crock pot. Combine every thing but the chicken. Season the chicken breast how ever you like. Now nestle the chicken into the juices.

Step 2Cook on low for 9-10 hours or on high for 6-7 hours.. The last half hour remove chicken and shred. Replace in crock pot to finish cookin. I served this over cooked rice..
