I first saw this in a news paper. After I made it I felt like some thing was missing. So I redid this with some changes to it.. Now I am happy with it. The boys and the people at the church dinner loved it..

Slow Cooker Crock Pot

Ingredients

  • 1 1/2 lb
    chicken breasts
  • 2 c
    chicken broth, low salt
  • 1 c
    white wine, medium
  • 8 oz
    frozen corn
  • 1 can(s)
    roltel undrained.
  • 1/4 c
    chopped cilantro
  • 3-4
    scallions. chopped
  • 1 tsp
    each, basil,thyme, cumin,and black pepper.
  • 1 tsp
    garlic powder,and onion powder.
  • 1/2 tsp
    salt

How to Make Bob W's Crock Pot Santa Fe Chicken.

Step-by-Step

  1. in a crockpot, I used a 7qt crock pot. Combine every thing but the chicken.
    Season the chicken breast how ever you like. Now nestle the chicken into the juices.
  2. Cook on low for 9-10 hours or on high for 6-7 hours.. The last half hour remove chicken and shred. Replace in crock pot to finish cookin.
    I served this over cooked rice..
