I mix a big batch of the blackening spices and keep them on hand to use on chicken or fish. This makes a quick, easy meal. Careful though, it's pretty spicy!

    fish filets, your choice

  • 2 tsp
  • 1/2 tsp
  • 1 tsp
    cayenne pepper
  • 1 tsp
  • 1 tsp
    thyme, dried
  • 1/2 tsp
  • 1/2 tsp
    onion powder

How to Make Blackened Chicken or Fish


  1. Preheat oven to 350 Degrees. Heat non-stick skillet until smoking hot. Mix together spices, coat chicken evenly on each side, place in hot skillet and cook 1 minute per side.
  2. Spray baking sheet with non-stick spray, place blackened chicken on baking sheet and bake 10 minutes at 350 degrees.
