I mix a big batch of the blackening spices and keep them on hand to use on chicken or fish. This makes a quick, easy meal. Careful though, it's pretty spicy!

Ingredients

  • 4 - boneless chicken breast or
  • 4 - fish filets, your choice
  • BLACKENING SPICES
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 teaspoon thyme, dried
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder

How To Make blackened chicken or fish

  • Step 1
    Preheat oven to 350 Degrees. Heat non-stick skillet until smoking hot. Mix together spices, coat chicken evenly on each side, place in hot skillet and cook 1 minute per side.
  • Step 2
    Spray baking sheet with non-stick spray, place blackened chicken on baking sheet and bake 10 minutes at 350 degrees.
