A great crock pot recipe that is easy and ready when you get home from a long hard day of work!

Ingredients

2 can(s)
black beans (undrained)
1 lb
frozen, boneless, skinless chicken breasts
16 oz
salsa
1/2 c
minute brown rice

Step-By-Step

1Starting with the unthawed, uncut, chicken breasts, place all four ingredients in the crock pot. Salsa last.
2Allow to simmer on low in crock pot for 6-8 hours. When you are ready to serve, stir with spoon until chicken has broken up into smaller pieces.
3Can be served in a bowl as is or you may decide you want chicken tortillas..if so, choose a tortilla you prefer (I like Mission Carb Balance whole wheat), add 1/2 cup of the Black Bean Chicken and top with some sour cream and shredded cheese.
