A great crock pot recipe that is easy and ready when you get home from a long hard day of work!

Ingredients

  • 2 cans black beans (undrained)
  • 1 pound frozen, boneless, skinless chicken breasts
  • 16 ounces salsa
  • 1/2 cup minute brown rice

How To Make black bean chicken

  • Step 1
    Starting with the unthawed, uncut, chicken breasts, place all four ingredients in the crock pot. Salsa last.
  • Step 2
    Allow to simmer on low in crock pot for 6-8 hours. When you are ready to serve, stir with spoon until chicken has broken up into smaller pieces.
  • Step 3
    Can be served in a bowl as is or you may decide you want chicken tortillas..if so, choose a tortilla you prefer (I like Mission Carb Balance whole wheat), add 1/2 cup of the Black Bean Chicken and top with some sour cream and shredded cheese.
