Ingredients
- 2 cans black beans (undrained)
- 1 pound frozen, boneless, skinless chicken breasts
- 16 ounces salsa
- 1/2 cup minute brown rice
How To Make black bean chicken

Step 1Starting with the unthawed, uncut, chicken breasts, place all four ingredients in the crock pot. Salsa last.

Step 2Allow to simmer on low in crock pot for 6-8 hours. When you are ready to serve, stir with spoon until chicken has broken up into smaller pieces.

Step 3Can be served in a bowl as is or you may decide you want chicken tortillas..if so, choose a tortilla you prefer (I like Mission Carb Balance whole wheat), add 1/2 cup of the Black Bean Chicken and top with some sour cream and shredded cheese.
