bbq chicken marinade for the grill

This came from Taste of Home magazine. We were "wowed" by the flavor! It tastes like BBQ infused into the meat, instead of in a sauce on the outside. The meat was extremely tender and juicy as well. We low carb, so I used liquid sucralose instead of sugar. I used a "family pack" (about 10 pieces) of bone-in, skin-on thighs, and a half recipe of the marinade was the perfect amount. For the half recipe, I used 70 drops of liquid sucralose, and it was fairly sweet (the way we like it). I'm sure this would work well on any cut of chicken, light or dark. A gas grill should work on low/med heat.

Ingredients

  • 2 1/2 cups brown sugar, firmly packed or
  • - liquid sucralose, to taste
  • 2 cups water
  • 2 cups apple cider vinegar
  • 2 cups catsup
  • 1 cup oil
  • 4 tablespoons salt
  • 3 tablespoons prepared mustard
  • 4 1/2 teaspoons worcestershire sacue
  • 1 tablespoon soy sauce
  • 1 teaspoon pepper
  • 1 teaspoon liquid smoke flavoring
  • 10 pounds chicken thighs and/or drumsticks

How To Make bbq chicken marinade for the grill

  • Step 1
    Mix marinade ingredients together (I do this in freezer baggies or 9x13 casserole dishes) and pour over chicken. Marinate 48 hours, turning every 6-8 hours.
  • Step 2
    Oil grill grates. Grill thighs over indirect heat 15-20 min. per side until internal temp is 160-170 degrees. (If using skin-on chicken, I like to place chicken over the coals for 5-10 minutes at the end to crisp the skin.)
