Ingredients

  • 1/4 c
    parmesan cheese
  • 2 Tbsp
    snipped fresh basil
  • 1 Tbsp
    olive oil
  • 2 tsp
    minced garlic
  • 4
    boneless, skinless chicken breasts
  • 1/2 tsp
    lemon peel
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    olive oil

How to Make Basil-stuffed chicken breasts

Step-by-Step

  1. In small bowl, combine parmesan cheese, basil, 1 tbsp oil, and garlic, mix. Pound chicken between plastic until 1/8"-thick. Spread cheese mix evenly down center of each breast, fold in sides and roll up. Fasten w/ toothpicks. In small bowl, combine lemon peel, lemon juice and 1 tbsp oil. Mix. Heat grill for med-high indirect heat. Grill chicken, turning once, for about 15 min, brushing w/ lemon sauce.
