- 6 chicken thighs, skinless
- 1/4 cup fresh lemon juice
- 1/2 small onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 teaspoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/4 teaspoon paprika
- pinch of chili powder (indian)
- 1 cup plain yogurt
- red food coloring (optional)
How To Make baked tandoori-style chicken

Step 1Preheat oven to 350 degrees. Brush the chicken meat with lemon juice and set aside for 30 minutes. Meanwhile, place the onion, garlic, ginger, coriander, cumin, 1 tbsp. lemon juice, and salt in a small food processor. Process until the mixture forms a smooth paste.

Step 2Combine the spice paste with paprika, chili powder and yogurt - mix well until smooth. Add several drops of red food coloring until the mixture becomes a deep red color.

Step 3Place chicken pieces in a plastic bag or shallow dish and spread the yogurt mixture liberally over the chicken. Allow chicken to marinate for a few hours or overnight.

Step 4Place chicken on a wire rack over a large baking pan. Bake for 45 minutes or until the chicken pieces are tender and fully cooked through.
