avocado chicken salad sandwiches
Every Saturday I take a small cooler of sandwich fixins to the race track to feed our pit crew. Usually it's sliced deli meat, but that sure gets old. So I thought I'd try something a little different and it was a hit!

Ingredients
- 3 cups rotisserie chicken, shredded
- 3/4 cup mayonnaise, more or less to taste
- 3/4 cup celery, chopped
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, chopped
- 2 - avocados, chopped
- 1 teaspoon lemon pepper
- 2 teaspoons dijon mustard
