1In small bowl, whisk together soy sauce, ginger, brown sugar and garlic powder. In lg bowl, combine cabbage, carrot, scallions and chicken.
2Pour soy sauce mix over cabbage mix, mix well. Place mix in colander, squeeze to drain. Spoon 1/2 cup cabbage mix onto each egg roll wrapper.
3Brush edges w/ egg. Fold 1 corner of wrapper up over cabbage mix. Then fold both sides over, roll up tightly. Heat oil in lg pot until hot. Add rolls in small batches. Fry for about 4 mins, or until golden and crisp. Drain on paper towels.
