These are so scrumptious. I serve with a sweet and sour duck sauce.

Ingredients

  • 1/2 c
    light soy sauce or reduced sodium soy sauce
  • 1/4 c
    light brown sugar
  • 1 Tbsp
    ground ginger
  • 2 tsp
    garlic powder
  • 6 c
    shredded bok choy cabbage
  • 1
    carrot, shredded
  • 3
    scallions, chopped fine
  • 1 c
    cooked, diced chicken breast
  • 12
    egg roll wrappers
  • 1
    egg, lightly beaten
  • ·
    peanut oil for frying

How to Make Asian chicken egg rolls

Step-by-Step

  1. In small bowl, whisk together soy sauce, ginger, brown sugar and garlic powder. In lg bowl, combine cabbage, carrot, scallions and chicken.
  2. Pour soy sauce mix over cabbage mix, mix well. Place mix in colander, squeeze to drain. Spoon 1/2 cup cabbage mix onto each egg roll wrapper.
  3. Brush edges w/ egg. Fold 1 corner of wrapper up over cabbage mix. Then fold both sides over, roll up tightly. Heat oil in lg pot until hot. Add rolls in small batches. Fry for about 4 mins, or until golden and crisp. Drain on paper towels.
