apricot sauced chicken

I made this one night when I was bored by plain old chicken, so I looked in the fridge and saw the apricot preserves and figured, why not make a sauce out of it. And it came out great.

Ingredients
- 2/3 cup low-sugar or sugar-free apricot preserves
- 3 tablespoons cider vinegar
- 3 tablespoons dijon mustard
- 1/4 teaspoon each, salt and pepper
- 2 pounds chicken drumsticks
How To Make apricot sauced chicken

Step 1Heat oven on 400. Spray a lg baking dish w/ cooking spray. Place chicken in baking dish. In bowl, stir together preserves, vinegar, mustard, salt and pepper. Place chicken in oven, cook about 45 min, brushing w/ sauce occasionally, or until chicken is no longer pink inside.
