apricot sauced chicken

I made this one night when I was bored by plain old chicken, so I looked in the fridge and saw the apricot preserves and figured, why not make a sauce out of it. And it came out great.

Ingredients For apricot sauced chicken

  • 2/3 c
    low-sugar or sugar-free apricot preserves
  • 3 Tbsp
    cider vinegar
  • 3 Tbsp
    dijon mustard
  • 1/4 tsp
    each, salt and pepper
  • 2 lb
    chicken drumsticks

How To Make apricot sauced chicken

    Heat oven on 400. Spray a lg baking dish w/ cooking spray. Place chicken in baking dish. In bowl, stir together preserves, vinegar, mustard, salt and pepper. Place chicken in oven, cook about 45 min, brushing w/ sauce occasionally, or until chicken is no longer pink inside.
