1 lbasparagus, fresh
2 ozitalian blend cheese, shredded
4 Tbspolive oil, extra virgin
2 tspall purpose greek seasoning
1 1/2 tspfresh ground black pepper
How to Make APEC PLATE
- In a mixing bowl, toss asparagus with 1 tbsp of oil and greek seasoning. In a hot skillet, add 2 tbsp oil. Pan-fry asparagus 3 minutes. Asparagus should be bright green. Remove from pan.
- In a another hot skillet and remaining oil. Crack eggs in the skillet. Fry eggs until egg whites are cooked. This should take about 2-3 minutes. Sprinkle cheese on top of eggs to melt.
- On 4 indiviual plates, place asparagus spears, 1/4 of proscuitto, eggs and pepper. Garnish.
