one of my favorite vegetables is asparagus. i saw mario batali cook asparagus and eggs the other am on the cooking channel. this is my twist. i hope you enjoy this. happy cooking! sw:)

Ingredients
- 1 pound asparagus, fresh
- 4 ounces prosciutto
- 4 large eggs
- 2 ounces italian blend cheese, shredded
- 4 tablespoons olive oil, extra virgin
- 2 teaspoons all purpose greek seasoning
- 1 1/2 teaspoons fresh ground black pepper
How To Make apec plate

Step 1In a mixing bowl, toss asparagus with 1 tbsp of oil and greek seasoning. In a hot skillet, add 2 tbsp oil. Pan-fry asparagus 3 minutes. Asparagus should be bright green. Remove from pan.

Step 2In a another hot skillet and remaining oil. Crack eggs in the skillet. Fry eggs until egg whites are cooked. This should take about 2-3 minutes. Sprinkle cheese on top of eggs to melt.

Step 3On 4 indiviual plates, place asparagus spears, 1/4 of proscuitto, eggs and pepper. Garnish.
