Sometimes when you throw stuff together, you get something amazing!! Had to write down this one!!! Theres a few flavors going on that you wouldnt think would blend well together, but if you're adventurous, please try it!! Hope you like it!! GFDFSF

Ingredients

  • 2
    large or medium chicken breasts, sliced
  • 3 c
    brown rice
  • 3 Tbsp
    coconut oil
  • 3 Tbsp
    olive oil
  • 1/2 c
    cashews, halved
  • 1 small can(s)
    cubed pineaple, or 1/2 cup cubed fresh pineapple
  • 5 sprig(s)
    aparagus
  • 2 c
    spinach
  • 1/2
    medium red bell pepper, chopped
  • 1/2
    medium yellow bell pepper, chopped
  • 1/2
    of a jalepeno, finely diced
  • 1/3
    yellow onion, diced
  • 3 clove
    garlic, finely diced
  • 3
    fresh mint leaves
  • 1/4 c
    fresh cilantro, finely chopped
  • Drizzle
    salt and pepper, to taste
  • Drizzle
    garlic & herb seasoning, to taste
  • Drizzle
    creole seasoning, to taste

How to Make Aloha Chicken and Brown Rice

Step-by-Step

  1. Cook the brown rice to package instruction. When done, mix in the coconut oil and add salt and pepper to taste. Set aside.
  2. In a bowl, mix together chicken, 1 tbspn olive oil, creole seasoning, garlic and herb seasoning, and salt and pepper to taste.
  3. Heat a skillet to just under medium heat, add 1 tbspn olive oil, onion and garlic; cook till just cooked through, about 3 mins. Raise to medium heat and add chicken from bowl; cook till chicken is done. Tranfer to plate, set aside.
  4. Add last tbspn of olive oil and cook the veggies, mint, cilantro, and pineapple; about 5 mins. Add the brown rice and chicken to the veggies. Cook another 3-4 mins. Serve. :)
