aloha chicken and brown rice

Sometimes when you throw stuff together, you get something amazing!! Had to write down this one!!! Theres a few flavors going on that you wouldnt think would blend well together, but if you're adventurous, please try it!! Hope you like it!! GFDFSF

Ingredients

  • 2 - large or medium chicken breasts, sliced
  • 3 cups brown rice
  • 3 tablespoons coconut oil
  • 3 tablespoons olive oil
  • 1/2 cup cashews, halved
  • 1 small can cubed pineaple, or 1/2 cup cubed fresh pineapple
  • 5 sprigs aparagus
  • 2 cups spinach
  • 1/2 - medium red bell pepper, chopped
  • 1/2 - medium yellow bell pepper, chopped
  • 1/2 - of a jalepeno, finely diced
  • 1/3 - yellow onion, diced
  • 3 cloves garlic, finely diced
  • 3 - fresh mint leaves
  • 1/4 cup fresh cilantro, finely chopped
  • Drizzle - salt and pepper, to taste
  • Drizzle - garlic & herb seasoning, to taste
  • Drizzle - creole seasoning, to taste

How To Make aloha chicken and brown rice

  • Step 1
    Cook the brown rice to package instruction. When done, mix in the coconut oil and add salt and pepper to taste. Set aside.
  • Step 2
    In a bowl, mix together chicken, 1 tbspn olive oil, creole seasoning, garlic and herb seasoning, and salt and pepper to taste.
  • Step 3
    Heat a skillet to just under medium heat, add 1 tbspn olive oil, onion and garlic; cook till just cooked through, about 3 mins. Raise to medium heat and add chicken from bowl; cook till chicken is done. Tranfer to plate, set aside.
  • Step 4
    Add last tbspn of olive oil and cook the veggies, mint, cilantro, and pineapple; about 5 mins. Add the brown rice and chicken to the veggies. Cook another 3-4 mins. Serve. :)
