ali's chicken with red wine sauce
This is my version of Coq Au Vin. Making it tonight for the first time with the leftover bottle of Valentine's Day wine.

Boneless chicken breasts are browned in a little butter to help create a crust and seal in the juices. Then onions and mushrooms are sauteed until brown. The chicken is nestled back in the pan and simmers in red wine. Once cooked, everything is tender and absorbs the flavor of the red wine. Make sure to serve with crusty bread to soak up the wonderful red wine sauce.

Ingredients
- 2 chicken breasts
- salt and pepper
- 8 tablespoons butter, divided
- 1 clove garlic, chopped small
- 1/2 medium onion, sliced
- 8 ounces fresh mushrooms, sliced
- 1 cup red wine, divided
How To Make ali's chicken with red wine sauce

Step 1Sprinkle chicken breasts with salt and pepper.

Step 2Add about 4 Tbsp of butter to a hot skillet. Brown both sides of the chicken breasts. Remove them and set aside on a plate. **NOTE** A variation of this recipe would be to shake the chicken pieces in flour first, then saute them.

Step 3Add the remaining 4 Tbsp of butter to the skillet. Cook garlic, onion, and mushrooms until everything is soft.

Step 4When mushrooms and onions are slightly brown, stir 1/2 cup of wine into the pan and bring to a boil.

Step 5Add chicken to the pan. Cover with mushrooms and onions. Add more wine to cover the chicken. Bring to a boil again. Then cover the pan, lower the heat, and simmer until the chicken reaches 165 degrees F internally.

Step 6Serve with crusty French bread and the same wine you used to cook chicken.
