This is my version of Coq Au Vin. Making it tonight for the first time with the leftover bottle of Valentine's Day wine.

Ingredients

  • 2 chicken breasts
  • salt and pepper
  • 8 tablespoons butter, divided
  • 1 clove garlic, chopped small
  • 1/2 medium onion, sliced
  • 8 ounces fresh mushrooms, sliced
  • 1 cup red wine, divided

How To Make ali's chicken with red wine sauce

  • Sprinkle chicken breasts with salt and pepper.
    Step 1
    Sprinkle chicken breasts with salt and pepper.
  • Brown both sides of the chicken breasts. Remove them and set aside on a plate.
    Step 2
    Add about 4 Tbsp of butter to a hot skillet. Brown both sides of the chicken breasts. Remove them and set aside on a plate. **NOTE** A variation of this recipe would be to shake the chicken pieces in flour first, then saute them.
  • Cook garlic, onion, and mushrooms until everything is soft.
    Step 3
    Add the remaining 4 Tbsp of butter to the skillet. Cook garlic, onion, and mushrooms until everything is soft.
  • Stir 1/2 cup of wine into the pan and bring to a boil.
    Step 4
    When mushrooms and onions are slightly brown, stir 1/2 cup of wine into the pan and bring to a boil.
  • Add chicken back to the pan with more wine and simmer.
    Step 5
    Add chicken to the pan. Cover with mushrooms and onions. Add more wine to cover the chicken. Bring to a boil again. Then cover the pan, lower the heat, and simmer until the chicken reaches 165 degrees F internally.
  • Serve with crusty bread.
    Step 6
    Serve with crusty French bread and the same wine you used to cook chicken.
