I made this today for lunch. i served over crisp iceberg lettuce. this salad is very refreshing. 5/18/13

Ingredients

  • 1 large cantaloupe peeled an seeded
  • 2 1/2 pounds chicken breast (cooked)
  • 1 medium red onion small dice
  • 4 - ribs celery
  • 1 large fresh red seedless grapes
  • 1 cup yogurt, plain and non-fat
  • 1/2 cup sour cream, lite
  • 1/3 cup mayonnaise, light
  • - zest from 2 lemons
  • - juice from 1/2 lemon
  • 1 tablespoon ginger minced
  • 1/2 tablespoon sugar
  • 1/4 cup toasted almonds

How To Make alice's chicken salad

  • Step 1
    For the cantloup cut into bite sizr pieces.
  • Step 2
    combine cooked chicken with cantaloup,onion,celery,and grapes.chill.
  • Step 3
    in another bowl. combine the yogurt,sour cream,zest,lemon juice,ginger,and sugar. Chill
  • Step 4
    Mix the dressing with the salad ingredents and the toasted almonds. Serve over your favoret greens.
