I made this today for lunch. i served over crisp iceberg lettuce.

Ingredients

  • 1 large
    cantaloupe peeled an seeded
  • 2 1/2 lb
    chicken breast (cooked)
  • 1 medium
    red onion small dice
  • 4
    ribs celery
  • 1 large
    fresh red seedless grapes
  • 1 c
    yogurt, plain and non-fat
  • 1/2 c
    sour cream, lite
  • 1/3 c
    mayonnaise, light
  • ·
    zest from 2 lemons
  • ·
    juice from 1/2 lemon
  • 1 Tbsp
    ginger minced
  • 1/2 Tbsp
    sugar
  • 1/4 c
    toasted almonds

How to Make ALICE'S CHICKEN SALAD

Step-by-Step

  1. For the cantloup cut into bite sizr pieces.
  2. combine cooked chicken with cantaloup,onion,celery,and grapes.chill.
  3. in another bowl. combine the yogurt,sour cream,zest,lemon juice,ginger,and sugar. Chill
  4. Mix the dressing with the salad ingredents and the toasted almonds. Serve over your favoret greens.
