I love brining with buttermilk; it creates such diverse levels of flavor, and by adding a few other spices really makes for a tasty bit of chicken.

I put these into the brine around 10:00p, and left them in the fridge for six hours, while I worked on some other recipes. So, they did not get cooked until 4:00 this morning. An interesting breakfast, to say the least.

So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE

  • THE BRINE

  • 1 c
    buttermilk
  • 1 tsp
    kosher salt
  • 1/2 tsp
    freshly ground black pepper
  • 2 Tbsp
    adobo sauce from a can of chipotle chiles in adobo
  • THE CHICKEN

  • 2 medium
    chicken thighs, skin on, bone in
  • 1 tsp
    grapeseed oil, or other non-flavored oil
  • 1/2 tsp
    paprika, hot or sweet, your choice
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    salt, kosher variety, fine grind
  • 1/4 tsp
    black pepper, freshly ground

How to Make Air Fryer Essentials: Buttermilk Chicken Thighs

Step-by-Step

  1. PREP/PREPARE
  2. You will need an air fryer to make this recipe.
  3. Gather your ingredients (mise en place).
  4. THE BRINE
  5. Mix all the ingredients together for the brine (I usually use a Ziploc bag), toss in the chicken thighs, and stick in the fridge for 4 – 6 hours… or overnight.
  6. THE CHICKEN
  7. Remove from the brine, pat dry, then brush the oil on the chicken thighs, and sprinkle the spices on the skin side.
  8. Add to the air fryer, skin side up.
  9. Bake at 350f (175c), until the chicken is cooked, and the juices run clear, about 18 – 22 minutes.
  10. PLATE/PRESENT
  11. Serve while hot with your favorite sides. My suggestion would be steamed rice and broccoli. Enjoy.
  12. Keep the faith, and keep cooking.
