nana's chicken tortilla casserole

This casserole is so amazing for chilly fall and winter days, or as a potluck dish. My mother gave me this recipe when i moved into my first college apartment.

Ingredients

  • 1/4 cup butter or margarine
  • 1 medium green bell pepper
  • 1 medium onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 cans diced ro-tel
  • 2 cups chopped cooked chicken
  • 12 - corn tortillas, torn into pieces
  • 2 cups shredded cheddar cheese

How To Make nana's chicken tortilla casserole

  • Step 1
    Preheat oven to 325
  • Step 2
    In a large saucepan, cook pepper and onion in butter until tender. add soups, ro-tel, and chicken, stirring until well blended.
  • Step 3
    Alternate layering tortillas, soup mixture, and cheese. repeat for three layers in 13x9 baking dish.
  • Step 4
    Bake 40 minutes Should be hot throughout and bubbling in the middle.
