nana's chicken tortilla casserole
This casserole is so amazing for chilly fall and winter days, or as a potluck dish. My mother gave me this recipe when i moved into my first college apartment.

Ingredients
- 1/4 cup butter or margarine
- 1 medium green bell pepper
- 1 medium onion
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 2 cans diced ro-tel
- 2 cups chopped cooked chicken
- 12 - corn tortillas, torn into pieces
- 2 cups shredded cheddar cheese

Step 1Preheat oven to 325

Step 2In a large saucepan, cook pepper and onion in butter until tender. add soups, ro-tel, and chicken, stirring until well blended.

Step 3Alternate layering tortillas, soup mixture, and cheese. repeat for three layers in 13x9 baking dish.

Step 4Bake 40 minutes Should be hot throughout and bubbling in the middle.
