Ingredients
- 1 lb asparagus, spinach or broccoli
- 4 chicken breasts or thighs
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 can cream of chicken soup
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon curry powder
- 1 cup shredded sharp cheddar cheese
- coutons/breadcrumbs
How To Make lemon chicken scallopini

Step 1Preheat oven to 375 degrees Fahrenheit.

Step 2After trimming the ends off the asparagus, place asparagus/Spinach/or Broccoli in a 9x13 baking dish.

Step 3Cut the raw chicken into bite-size chunks. Season with salt and pepper.

Step 4In a skillet over medium heat, brown the chicken in oil on both sides, 3-4 minutes each side. Note - your chicken will not be cooked all the way through at this point.

Step 5Arrange chicken over asparagus/Spinach/Broccoli. In a bowl, combine soup, mayonnaise, lemon juice, and curry powder; pour over chicken.

Step 6Cover and bake for about 30 minutes. Pull the chicken dish out of the oven and sprinkle with shredded cheese.

Step 7Place the dish back into the oven until the cheese has melted. Let stand 5 minutes before serving.

Step 8I often will put the Cheese on top of the Casserole and cover with Foil until the last 10 minutes, then remove the Foil and let Cheese melt and croutons get a bit crusty.
