This is my Granma's recipe for King Ranch Chicken. She mixes everything together all at once, and I actually found I liked that a lot better than those who layer everything. This is my favorite recipe, naturally :)

Ingredients

  • 1
    whole chicken
  • 1 pkg
    tortilla chips
  • 3/4 can(s)
    fried onion
  • 1/4 c
    green peppers
  • 1 tsp
    chili powder
  • 1 c
    milk
  • 1 can(s)
    cream of chicken
  • 1 can(s)
    cream of mushroom
  • 1 can(s)
    rotel
  • 1 large
    bag of chedder cheese

How to Make King Ranch Chicken

Step-by-Step

  1. Cook chicken, draining, and deboning.
  2. Fry onions (using oil or butter, it doesn't matter), and drain out the oil/grease. Add chicken to pan with onions and fry for a minute. Add the rest of the ingredients except cheese. Stir and blend.
  3. Add 3/4th of your cheese and mix into the rest of the ingredients.
  4. Crush tortilla chips and line a 9x13 pan with them. Pour mixture of the chips, topping with more tortilla chips (either crushed or whole) and top with cheese.
  5. Cook for 350 for 40 minutes
