Hands down my family's favourite casserole. Quick and easy to make with excellent results, this is a true comfort dish utilizing that leftover ham.

Ingredients

  • 2 cups white potatoes, peeled, thinly sliced
  • 1 small sweet onion, coarsely chopped
  • 1/3 cup canned small mushrooms, sliced
  • 1/3 cup frozen baby peas
  • 2 cooked ham, coarsely sliced
  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1/2 cup 2% milk
  • 1/4 cup heavy cream
  • 1 teaspoon course Dijon mustard
  • 1/2 - 1 teaspoons sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon Herbs de Provence, good quality
  • 1 cup shredded extra aged cheddar or stilton
  • shredded cheese and chopped parsley, to garnish

How To Make herbs de provence - potato and ham casserole

  • Step 1
    Preheat oven to 350 degrees F. Combine the vegetables, ham, and frozen peas and put aside until required.
  • Step 2
    In a small sauce pan, melt the butter. Whisk in the flour; slowly add the milk and the heavy cream.
  • Step 3
    Add the mustard, salt, pepper and Herbs de Provence. Cook on medium heat, stirring until smooth and boiling. Lower the heat and add the cheese, mixing until melted. Remove from heat and set aside until required.
  • Step 4
    Assemble: Put the potatoes, onions, peas, mushroom and ham into a large bowl and add the cheese sauce. Mix well. Pour into a prepared dish, garnish and bake uncovered for 50 - 60 minutes, or until the potatoes are tender. Garnish with shredded cheese and parsley.
