This dish is easy to put together, and something even older children can accomplish. Be sure to use a favorite seasoning blend, because this makes the dish. Any type of smoked sausage can be used. We like the Italian-seasoned beef variety.
1For easy clean up, line a 9x13" metal baking pan with foil. Preheat oven to 400°F.
Wash and prepare potatoes and vegetables. Slice sausage into 1/2" rounds.
2Arrange potatoes and vegetables in pan. Drizzle with olive oil and sprinkle with seasonings. If your Greek seasoning contains salt and pepper, no more is needed. If your seasoning does not contain these, then add some salt and pepper to taste. Stir vegetables carefully to distribute the oil and seasonings. Place the sausage slices evenly in the pan also.
3Roast on bottom rack of oven for 20 minutes. Stir the dish and redistribute everything evenly, then roast for another 20-30 minutes, until potatoes are browned and pierce easily with a fork.
