enchiladas delicioso
My love of TexMex is legendary. My best recipes always start with my cravings, and this one is no different. The flavors blend perfectly, and the textures are fun. I recently took two huge pans of this recipe to a church outing, and about 15 folks devoured all of it.

Ingredients
- 12 white corn tortillas
- 1 1/2 pounds very lean hamburger
- 1 1/2 - 2 pounds Mexican blend grated cheese
- 1 large onion, chopped
- 1 can enchilada sauce (28 oz)
- 4 tablespoons chopped canned chipotle with sauce
- 1 - 2 tablespoons Knorr tomato chicken bullion
- 1 can Rotel (10 oz)
- 1 can white shoepeg corn
- 1 cup cilantro, fresh and chopped
- 1 teaspoon cumin
- black olives, if desired
- sour cream, if desired
- avocado, if desired
How To Make enchiladas delicioso

Step 1Cook the hamburger and chopped onion, and drain any grease.

Step 2Mix the enchilada sauce with all ingredients except tortillas, meat, and cheese.

Step 3Grease a 9x13 pan and set oven temp to 350 degrees F.

Step 4Dip each tortilla in the sauce and cover the bottom of the pan with the dipped tortillas.

Step 5Layer the meat mixture on top of the tortillas and then the cheese to cover well.

Step 6Repeat, except add plenty of sauce before adding the last cheese layer.

Step 7Bake 25 minutes or until hot and cheese is melted well.
