easy cheesy tortellini casserole

Something I threw together one night when I wasn't up to a trip to the store and wanted to use up things I had on hand. Serve with a green salad and garlic bread, if desired.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 1 pound ground turkey (thigh, not breast-too dry!)
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon dried rosemary, crushed
  • - salt and pepper, to taste
  • 1 can (14.5 oz) tomato sauce
  • 4 tablespoons tomato paste
  • 1/4 cup red wine
  • 4 ounces cream cheese
  • 16 ounces packaged fresh cheese tortellini
  • 4 ounces mozzarella cheese, sliced 1/4-inch thick
  • 1/4 cup grated parmesan cheese

How To Make easy cheesy tortellini casserole

  • Step 1
    In a large skillet, heat oil over medium heat. Add onion and saute until softened. Add garlic and cook 1 minute, being careful not to burn.
  • Step 2
    Add ground turkey and cook, breaking up as it cooks, for 10 minutes, or until browned. Stir in basil, rosemary, salt and pepper, tomato sauce, tomato paste and wine. Bring to a simmer, cove, and cook 20 minutes.
  • Step 3
    Add cream cheese and stir until melted and combined with sauce.
  • Step 4
    Cook tortellini according to package instructions; drain.
  • Step 5
    Preheat oven to 350F. Coat a 3-quart deep casserole with nonstick cooking spray.
  • Step 6
    Put drained tortellini in casserole and top with sauce. Stir to mix in. Top with mozzarella and sprinkle parmesan over top.
  • Step 7
    Bake 30 minutes, or until bubble and cheese is browned lightly.
