Dolly's Zucchini Casserole

1 csour cream

6 csliced zucchini

1/2 cwater

1/2 tspsalt

1/4 cchopped onions

1 can(s)cream of chicken or mushroom soup

1 cshredded carrots

8 ozpkg. stove top stuffing

1/2 cmelted butter
How to Make Dolly's Zucchini Casserole
- Bring water and salt to a boil. Add zucchini and onions. Cook until tender on medium heat; drain.
- Combine soup, sour cream and carrots. Fold in drained zucchini and onions.
- In separate bowl, combine stuffing and butter. Spread half in bottom of baking dish. Spoon vegetable mixture on top of stuffing. Sprinkle remainder of stuffing on top. Bake at 350 degrees for 20 minutes.
