1Bring water and salt to a boil. Add zucchini and onions. Cook until tender on medium heat; drain.
2Combine soup, sour cream and carrots. Fold in drained zucchini and onions.
3In separate bowl, combine stuffing and butter. Spread half in bottom of baking dish. Spoon vegetable mixture on top of stuffing. Sprinkle remainder of stuffing on top. Bake at 350 degrees for 20 minutes.
