THE RECIPE WAS TAKEN FROM NORTH CAROLINA "OUR STATE" MAGAZINE. I HAVE FIXED IT 3 TIMES AND EVERYBODY LOVES THIS DISH.

Ingredients
- 8 tablespoons butter, divided
- 6 tablespoons all purpose flour
- 3 cups whole milk, warm
- - freshly ground black pepper
- 2 cups medium cheddar cheese grated, divided
- 4 ounces cream cheese, softened
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg
- 3 cups elbow macaroni, cooked, drained and rinsed
- 10 ounces package smithfield old fashioned sugar cured country ham, cooked

Step 1COOK THE SMITHFIELD HAM IN MICROWAVE ABOUT 1 MINUTE. CUT UP IN BITE SIZE. SET ASIDE.

Step 2PREHEAT OVEN 375 DEGREE. GREASE A 4 QUART BAKING DISH USING 1 TABLESPOON OF BUTTER. SET ASIDE.

Step 3COOK ELBOW MACARONI ACCORDING TO THE PACKAGE AND ADD SALT TO TASTE. ABOUT 15 MINUTES. AFTER COOKED, PUT IN COLANDER TO RINSE AND DRAIN. WASH THIS POT AND BE READY TO COMBINE EVERYTHING TOGETHER IN THIS POT BEFORE TRANSFERRING TO BAKING DISH.

Step 4MELT REMAINING BUTTER IN LARGE SAUCEPAN OVER MEDIUM-HIGH HEAT. ADD FLOUR AND COOK, WHILE STIRRING GENTLY FOR 1 MINUTE. GRADUALLY WHISK IN MILK AND BRING TO A BOIL. REDUCE HEAT TO MEDIUM LOW, ADD PEPPER TO TASTE AND STIR UNTIL THICK. REMOVE PAN FROM HEAT.

Step 5ADD 1 CUP OF CHEDDAR CHEESE AND ALL THE CREAM CHEESE AND WHISK UNTIL MELTED. STIR IN CAYENNE PEPPER AND NUTMEG.

Step 6PUT THE RINSED MACARONI IN THE BIG POT, ADD THE CHEESE MIXTURE AND ADD THE HAM. MIX UP AND TRANSFER TO THE 4 QT. BAKING DISH.

Step 7SPRINKLE THE REMAINING CUP OF CHEDDAR CHEESE ON TOP. BAKE FOR 20-30 MINUTES OR UNTIL TOP IS GOLDEN AND SAUCE IS BUBBLING.
