Oh Pizza what?? This is a healthy twist on pizza! I like to try new things and this creation came to me one night after work. This is a meal we all enjoyed and I hope you do too! One fun thing about it is you can add anything to it you want on your “pizza.” The sky is the limit or at least your casserole dish is the limit.

Ingredients For chicken pizza casserole

  • 1 bag
    riced cauliflower
  • 8
    chicken tenderloins
  • 1 jar
    pizza sauce
  • 6 slice
    mozzarella cheese
  • 5 slice
    pepperoni (sandwich size) cut up
  • 1 1/2 tsp
    garlic powder
  • 2 tsp
    italian seasoning
  • 1/2 tsp
    red pepper flakes

How To Make chicken pizza casserole

  • Riced Cauliflower with seasonings

    Spray casserole dish with non stick. Pour riced cauliflower into casserole dish. Sprinkle seasonings onto cauliflower.

    Lay chicken on cauliflower and pour pizza sauce on top of chicken.
  • Mozzarella cheese slices with chopped pepperoni

    Place mozzarella slices on top of sauce and sprinkle with pepperoni.

    Cover and bake about 35 minutes at 350 degrees. Remove cover and place under broiler to brown cheese.
