WARNING! This bake is a calorie, fat gram, and sodium overload; if you love Mexican and are ready to break the bank, this is a great way to go! Not a throwback Frito casserole, this dish mixes ground beef, taco seasoning, leftover rice, green chilies, salsa, refried beans, and CHEESE!. Trust me, this WORKS. Top while hot w/ tomatoes, lettuce, avocado, and/or sour cream. All are optional.

Ingredients For cheesy frito taco bake

  • 1 1/2 lb
    ground beef
  • 1 md
    onion, chopped
  • pinch
    freshly ground pepper
  • 1/2 tsp
    onion powder
  • 1 pkg
    (1.2 ounces) taco seasoning
  • 1 c
    salsa or picante sauce
  • 1 can
    (4 ounces) diced green chilies
  • 1/4 c
    water
  • 2 c
    cooked rice. cooks choice of color.
  • 3-3 1/2 c
    cheddar or mexican cheese blend, divided
  • 1 can
    (16 ounce) refried beans
  • 1 c
    fritos
  • 1 can
    (2.25 ounce) black olives, sliced
  • 1- 1 1/2
    green onions, chopped. optional for topping after baked.
  • 1 md
    tomato, chopped. optional for topping after baked.

How To Make cheesy frito taco bake

  • 1
    If you do not have leftover rice, make 2 cups of cooked rice. Cooks choice on rice color.

    Preheat oven to 350 degrees. Grease a 13X9 inch baking dish and set aside for later use.

    In a 14 or 16 inch skillet over medium heat, brown beef until cooked through and no longer pick.

    Remove meat and set aside. Drain fat, reserving 1 tablespoon in skillet.

    Add chopped onion to skillet and saute until softened and translucent, about 6-8 minutes.

    Season with pepper and onion powder. Add taco seasoning.

    Return beef to skillet and then add salsa, chilies, and water. Mix to combine.

    Bring mixture to a boil, then reduce heat to low, cover and simmer for 5 minutes.

    Remove from heat and stir in rice, 2 cups of cheese, and refried beans. Mix well and then transfer to prepared baking dish.

    Top with Fritos and sprinkle remaining cheese over Fritos. Sprinkle black olives over cheese.

    Bake in preheated oven until cheese is melted and dish is bubbly and heated through. About 30-35 minutes. Top with chopped tomato or green onions, optional. See other options in About Recipe section.

    Remove from oven and top with more Fritos or other toppings as desired. Serve hot and savor that cheesy taco goodness!
