cajun duck casserole
I created a duck recipe for the first time. It's a cajun casserole, filled with sliced duck breast, penne pasta, mushrooms, and a creamy cajun duck sauce. It's so delicious!

Ingredients
- 1 cup cubed American cheese
- 4 tablespoons cajun seasoning, divided
- 16 ounces uncooked penne pasta
- 1 tablespoon olive oil
- 4 duck breasts(skin-on), sliced
- 1 medium red onion, peeled and chopped
- 3 cremini mushrooms, sliced
- 1 tablespoon poultry seasoning mixed with brown sugar
- 3 1/2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 tablespoon margarine
- 2 tablespoons teriyaki sauce
- 1 cup heavy cream
- 3/4 cup half and half
- 3/4 cup chicken broth
- 3 tablespoons honey mustard
- 8 ounces monterey jack cheese, shredded
How To Make cajun duck casserole

Step 1Preheat oven to 350 degrees F.

Step 2Coat a 9x13-inch baking dish with cooking spray. Add cubed American cheese and 1 tablespoon cajun seasoning; mix well.

Step 3Cook penne pasta according to package directions; drain.

Step 4Transfer to a large bowl. Season with 1 tablespoon cajun seasoning and set aside.

Step 5Heat olive oil in a large, deep skillet over medium-high heat. Add sliced duck breasts, chopped red onion and sliced mushrooms. Begin to saute for 5 minutes until the duck is well done and the vegetables are tender.

Step 6Stir in poultry seasoning/brown sugar, black pepper, garlic powder and 1 tablespoon cajun seasoning. Remove from heat and set aside.

Step 7Melt the margarine and heat the teriyaki sauce in a large saucepan over medium heat. Combine heavy cream, half and half, chicken broth, honey mustard and remaining cajun seasoning; stir well. Bring to a boil for 6 minutes until the sauce begins to thickened.

Step 8Add sauteed duck mixture and cooked penne pasta, mix together until combined. Remove from heat.

Step 9Pour into a prepared baking dish and spread evenly. Sprinkle with shredded monterey jack cheese.

Step 10Bake for 25 minutes or until the cheese is melted. Cool completely for 8 minutes.
