Cabbage Roll Casserole is an easy family favorite. It combines all the delicious flavors of stuffed cabbage rolls with a lot less time and effort. This delectable casserole makes eight healthy servings and the leftovers heat perfectly in the microwave.

While delicious, cabbage rolls are time-consuming to prepare. This casserole has all the same flavors of cabbage rolls, without all the fuss. The seasoning is well balanced with the tomato, rice, and meat mixture. Cayenne pepper adds the perfect amount of heat, though that can easily be omitted. We loved all the layers of cheesy goodness. It will become one of your favorite go-to dinner meals. Thanks to the cabbage, it's even ideal for New Year's or St. Patrick's Day.

Ingredients

  • cooking spray
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cayenne pepper
  • 2 tablespoons brown sugar
  • 1 can tomato sauce (15 oz)
  • 1 can low sodium beef broth (14.5 oz)
  • 1 cup uncooked long grain white rice
  • 2 tablespoons olive oil, divided
  • 1 medium green cabbage, chopped
  • 1 1/2 cups finely shredded sharp cheddar cheese
  • 1 1/2 cups finely shredded Monterey Jack cheese

How To Make cabbage roll casserole

  • Baking dish sprayed with non-stick spray.
    Step 1
    Preheat the oven to 350 degrees F. Spray a 9×13 casserole dish with nonstick or olive oil cooking spray.
  • Browning ground beef, onion, and seasonings.
    Step 2
    In a large skillet, brown the ground beef. About halfway through, add the onion. Once browned, reduce the heat to low. Add the garlic and cook for 1 minute, stirring continuously. Drain any excess fat from the skillet.
  • Paprika, onion powder, cayenne, brown sugar, tomato sauce, beef broth, and rice added to the skillet.
    Step 3
    Add the paprika, onion powder, cayenne, brown sugar, tomato sauce, beef broth, and rice. Bring the mixture to a low boil. Turn to a simmer and cover with a lid. Cook 20 minutes until the rice is tender.
  • Cooking onions and cabbage in another skillet,
    Step 4
    Heat 1 tablespoon olive oil in another large skillet over medium heat. Add 1/2 of the chopped cabbage and cook until slightly tender; 5-7 minutes. Remove and repeat with remaining olive oil and remaining cabbage.
  • A layer of cabbage in the baking dish.
    Step 5
    Spread the cabbage over the bottom of the casserole dish.
  • Ground beef mixture on top of the cabbage.
    Step 6
    Top with half of the ground beef mixture.
  • Cheese sprinkled over the ground beef.
    Step 7
    Sprinkle with 1/2 of the cheeses, blending them.
  • Remaining cabbage added to the baking dish and layers repeated.
    Step 8
    Spread the remaining cabbage over the cheese in the casserole dish. Top with the remaining beef mixture and then with the remaining cheese.
  • Covered casserole baking in the oven.
    Step 9
    Cover the casserole with foil and bake for 20 minutes.
  • Foil removed and continuing to bake the casserole.
    Step 10
    Remove the foil and bake another 20 minutes or until the cheese is lightly browned.
