This is a quick to throw together, one-pan main dish that is delicious.

Blue Ribbon Recipe

Kay is right... this dish is quick and delicious. It reminds us of a hash. Spicy sausage adds a kick to it. If you don't like hot sausage, a mild one can easily be substituted. This recipe is a great canvas to adjust the ingredients to suit your taste. This hearty dish can be a main or a side, depending on what else is on the menu. Enjoy this for the new year or around St. Patrick's Day if you're not a corned beef fan.
