Bison was on sale, so I found a recipe that sounded pretty good and adjusted it to suit my family's taste!

Ingredients
- 1 pound ground bison
- 6 ounces uncooked white or brown rice
- 2 cloves garlic, minced or grated
- 1 (15 oz) can black beans, drained and rinsed
- 1 (14 oz) can diced tomatoes, undrained
- 3/4 cup salsa (any type)
- 1 teaspoon cumin
- 1 teaspoon oregano, dried
- 1 teaspoon ground chili powder
- 1/2 cup tortilla or dorito chips, crumbled
- 1/2 cup shredded cheese, mexican blend or cheddar or your choice
- 1 tablespoon chopped cilantro
- 1 tablespoon green onion, sliced
- LIME-CILANTRO CREME
- 2/3 cup sour cream
- 3 tablespoons green onions, sliced
- 1 tablespoon fresh cilantro, minced
- 1 teaspoon lime zest
- salt, to taste
How To Make bison ole!

Step 1Preheat the oven to 350ºF. Cook rice according to directions; cover and keep warm.

Step 2Cook ground bison and garlic over medium heat in a large skillet until meat is brown. Drain off fat.

Step 3Stir cooked rice into cooked, drained ground bison in the skillet. Stir in beans, undrained tomatoes, salsa, oregano, cumin, and chili powder.

Step 4Put bison mixture in an ungreased 2-quart baking dish. Bake, uncovered, for about 30. Sprinkle with tortilla chips and cheese. Bake, uncovered, for another 5 minutes until cheese is melted. Sprinkle with the 1 tablespoon each sliced green onion and chopped cilantro. Serve with Cilantro-Lime Cream.

Step 5Cilantro-Lime Cream: Stir together the sour cream, finely chopped green onions, cilantro, and lime zest in a small bowl. Taste and add some salt if needed. Chill until just before serving.
