Bison was on sale, so I found a recipe that sounded pretty good and adjusted it to suit my family's taste!

Ingredients

  • 1 pound ground bison
  • 6 ounces uncooked white or brown rice
  • 2 cloves garlic, minced or grated
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (14 oz) can diced tomatoes, undrained
  • 3/4 cup salsa (any type)
  • 1 teaspoon cumin
  • 1 teaspoon oregano, dried
  • 1 teaspoon ground chili powder
  • 1/2 cup tortilla or dorito chips, crumbled
  • 1/2 cup shredded cheese, mexican blend or cheddar or your choice
  • 1 tablespoon chopped cilantro
  • 1 tablespoon green onion, sliced
  • LIME-CILANTRO CREME
  • 2/3 cup sour cream
  • 3 tablespoons green onions, sliced
  • 1 tablespoon fresh cilantro, minced
  • 1 teaspoon lime zest
  • salt, to taste

How To Make bison ole!

  • Step 1
    Preheat the oven to 350ºF. Cook rice according to directions; cover and keep warm.
  • Step 2
    Cook ground bison and garlic over medium heat in a large skillet until meat is brown. Drain off fat.
  • Step 3
    Stir cooked rice into cooked, drained ground bison in the skillet. Stir in beans, undrained tomatoes, salsa, oregano, cumin, and chili powder.
  • Step 4
    Put bison mixture in an ungreased 2-quart baking dish. Bake, uncovered, for about 30. Sprinkle with tortilla chips and cheese. Bake, uncovered, for another 5 minutes until cheese is melted. Sprinkle with the 1 tablespoon each sliced green onion and chopped cilantro. Serve with Cilantro-Lime Cream.
  • Step 5
    Cilantro-Lime Cream: Stir together the sour cream, finely chopped green onions, cilantro, and lime zest in a small bowl. Taste and add some salt if needed. Chill until just before serving.
