betty's rich beef italian casserole

Chunky pieces of beef cooked in a rich Italian styled tomato sauce. Serve with creamy polenta or mash with crusty bread and steamed veggies. Perfect on a chilly night. I have baked this and used the slow cooker/croc pot. If using the croc pot use only ONE tin of tomatoes.

Ingredients For betty's rich beef italian casserole

  • 3 pounds (1 1/2 kilos) stewing beef, diced
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 2 tins chopped tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/3 cup tomato paste
  • 2 teaspoons white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup flat leaf parsley, chopped **optional
  • 1/2 cup water, used to swish out tomato tins

    Pre-heat oven to 375oF/180oC and grease a casserole dish, that has a lid.

    Place all the ingredients except the parsley in a casserole dish and pop in the oven and bake for 1 1/2 - 2 hours stirring once during cooking time.

    Add the parsley and stir through. Serve.
