·1 lb (500g) minced beef
·1 small-ish onion diced fine
·1/3 cup uncooked white rice
·1/2 tablespoon mixed herbs
·1 teaspoon minced garlic
·1 tin tomato soup
·1 soup tin of water
How to Make Betty's "Aussie" Porcupine Meatballs
- Pre-heat your oven to 350oF/180oC.
In a large bowl use your hands to mix the minced beef, rice, egg, garlic and herbs. Form into meatballs (a little smaller than a golf ball) and place into a GREASED casserole dish with a lid.
- Grab a pot and combine the soup and water, stir well and heat until almost boiling.
- Use the back of a wooden spoon to pour the soup mixture over the meatballs (this prevents the meatballs from breaking up and becoming a mush pile)
- Pop on the lid and slide the dish into the oven and bake for 1 hour. Serve with mashed potatoes or creamy polenta.
