betty's "aussie" porcupine meatballs
I was given this recipe by my Grade 7 Home Ec. Teacher well over 20 years ago and have been making it ever since. Only an few ingredients and a true family favourite. I always double this as I have 6 to feed every night including 3 sons and a truck driver husband.

Ingredients
- - 1 lb (500g) minced beef
- - 1 small-ish onion diced fine
- - 1/3 cup uncooked white rice
- - 1/2 tablespoon mixed herbs
- - 1 egg
- - 1 teaspoon minced garlic
- - 1 tin tomato soup
- - 1 soup tin of water
How To Make betty's "aussie" porcupine meatballs

Step 1Pre-heat your oven to 350oF/180oC. In a large bowl use your hands to mix the minced beef, rice, egg, garlic and herbs. Form into meatballs (a little smaller than a golf ball) and place into a GREASED casserole dish with a lid.

Step 2Grab a pot and combine the soup and water, stir well and heat until almost boiling.

Step 3Use the back of a wooden spoon to pour the soup mixture over the meatballs (this prevents the meatballs from breaking up and becoming a mush pile)

Step 4Pop on the lid and slide the dish into the oven and bake for 1 hour. Serve with mashed potatoes or creamy polenta.
