au gratin potatoes with smoked ham and lima beans

I came up with this recipe when I bought the wrong kind of beans at the store. I wanted butter beans and I bought lima beans and the taste is just not the same. So I had no use for the lima beans and did not like the taste until this recipe. I also did not have any cheddar cheese on hand so I used what I had and it came out great with the white cheeses and the two slices of yellow cheese I did have made a nice topping. I hope you will enjoy my recipe!

Ingredients

  • 2-3 medium white potatoes peeled & sliced
  • 2 slices ham *tip: if you don't have smoked ham just add smoke flavoring to the chopped pieces of ham
  • 1 small white onion sliced
  • 1 cup lima beans frozen
  • 1 cup mozzarella cheese grated
  • 1/2 cup monterey jack cheese grated
  • 2 slices american cheese cut into strips
  • 3 dashes japones dried chili's or crushed chili peppers i use japones
  • 3 dashes garlic powder
  • 3 dashes black pepper
  • 1 cup milk
  • 1 tablespoon flour or 1 tsp flour & 1 tsp country gravy mix for added flavor
  • 1 - layer of pre-made stove top chicken stuffing on the bottom (optional)
  • - grated dried or fresh parmesan cheese for the top

How To Make au gratin potatoes with smoked ham and lima beans

  • Step 1
    In a glass 1 1/2-2 quart glass casserole dish first layer onion, then stuffing, then potatoes, lima beans, & ham, mozzarella & jack cheeses, then give each layer a dash of the garlic powder and black pepper and the red reppers.
  • Step 2
    On the top layer lay the strips of yellow cheese and add a handful of the chopped ham then sprinkle with Parmesan Cheese.
  • Step 3
    Bake covered at 400 degrees in a preheated oven for 40 minutes then uncover and bake another 20 minutes. Delicious, the lima beans goes great with this dish and a good way to eat them lima beans.
