Ingredients
- 2 cans (7 oz. each) solid white albacore tuna, drained and flaked
- 2 large eggs, lightly beaten
- 1/2 cup crushed tortilla chips (white or yellow corn)
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely diced red bell pepper (seeded)
- 1 tablespoon lemon juice
- 1 tablespoon taco seasoning mix
- 1/4 cup vegetable oil
- 4 - hamburger buns, toasted
- 1 cup shredded lettuce
- 1/4 cup mayonnaise, optional
- 1/4 cup salsa
How To Make southwest tuna burgers

Step 1In a large bowl, combine tuna, eggs, tortilla chips, cilantro, bell pepper, lemon juice and taco seasoning. Stir well. Refrigerate for 1 hour (this makes it easier to form patties). Shape into 4 patties.

Step 2Heat oil in a large skillet over medium heat. Add patties and and cook 3 minutes on each side, or until golden brown.

Step 3Serve on buns with shredded lettuce, mayo and salsa.
