This is a low carb version of the classic patty melt with a couple of fantastic hacks...the addition of beefy onion soup mix and minced onion, with Velveeta cheese on a low carb toasted nut bread is unbelievably yummy. Substitute the low carb bread with rye toast for a traditional patty melt.

Ingredients For patty melt low carb cheesy double patties

  • 1/2 lb
    ground chuck
  • 1/4 c
    beef stock
  • 2 Tbsp
    dry minced onions
  • 1 pkg
    beefy onion soup mix
  • 4 slice
    cheese
  • 1/4 c
    butter, plus more for bread
  • 4 slice
    low-carb bread
  • 2 oz
    mayonnaise

How To Make patty melt low carb cheesy double patties

  • Ground meat mixed with minced onion and beefy dry onion soup mix

    Place ground chuck in bowl.
  • Beef stock and Beefy Onion dry soup mix

    Add beef stock to measuring cup and pour dry minced onions into cup to absorb liquid.
  • Dried minced onion soaking in beef stock

    After about 5 minutes, when the minced onions have absorbed the beef stock, pour over the ground chuck, add the beefy onion soup mix to the meat and mix well by hand. The flavor that the beef stock/minced onion/soup mix add will blow away your taste buds!
  • Patty balls placed on skillet top with butter

    Form the ground chuck into four balls of the same size. Two patties for each melt sandwich will be 1/4 pound.
  • Toasted bread, smothered with mayonnaise

    Warm griddle and add 1/4 cup butter to melt. Meanwhile, toast the bread slices (I like seeded Hero bread which is only 1 carb, but rye bread is the traditional choice), butter, then spread each with a generous amount of mayonnaise (I like Duke's Mayo and kosher whipped & salted butter but any butter or mayo will be fine).
  • Patty balls traditionally smashed using spatula or smash impliment

    Place patty balls onto buttered griddle and smash the patties. Flip in 2-4 minutes, once they have cooked.
  • Place cheese slice over each patty

    Flip patties and place slices of cheese (Velvetta slices are super gooey but standard American cheese slices are fine) on each one and cover for 2-4 minutes
  • Cover placed over skillet to melt cheese on the patties

    Stack two patties onto one slice of buttered/mayo'd toast, and the other two patties onto a second slice of buttered/mayo'd toast.
  • Completed patty melt resting on plate with gooey cheese between double patties of burger

    Place remaining buttered/mayo'd toast onto each patty melt, slice in half, and enjoy!!!
