Ingredients
- 1 tablespoon olive oil or oil of your choice
- 1 small onion, finely chopped
- 8 ounces fresh mushrooms, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1 can 15-oz. can black beans, rinsed and drained
- 1/4 cup fresh cilantro leaves, packed
- 2 ounces goat cheese, crumbled (optional)
- 4 slices stale or toasted bread, processed to make fresh bread crumbs
- salt & pepper to taste
- 6 hamburger buns
- salsa

Step 1Prepare grill - medium hot.

Step 2Heat the oil in a large skillet over medium-high heat. Add onions and cook until golden. Add mushrooms, garlic and cumin and cook, stirring until mixture has evaporated the liquid, but do not burn.

Step 3Spoon the mushroom mixture into a food processor and add the black beans. Process/Pulse until well combined but still chunky.

Step 4Spoon mixture into a boil and add goat cheese, if using. and bread crumbs. Add salt and pepper to taste.

Step 5Wet hands and for the mixture into 6 burgers. Mist both sides with nonstick cooking spray. Grill the burgers until crisp and heated through (this can be done in a non-stick skillet on the stove top). Serve the burgers on buns with lettuce, tomato, avocado and the salsa.
