A great alternative to beef burgers. These mushroom-black bean burgers can be grilled or pan fried. Enjoy!

Ingredients

  • 1 tablespoon olive oil or oil of your choice
  • 1 small onion, finely chopped
  • 8 ounces fresh mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 can 15-oz. can black beans, rinsed and drained
  • 1/4 cup fresh cilantro leaves, packed
  • 2 ounces goat cheese, crumbled (optional)
  • 4 slices stale or toasted bread, processed to make fresh bread crumbs
  • salt & pepper to taste
  • 6 hamburger buns
  • salsa

How To Make mushroom-black bean veggie burgers

  • Step 1
    Prepare grill - medium hot.
  • Step 2
    Heat the oil in a large skillet over medium-high heat. Add onions and cook until golden. Add mushrooms, garlic and cumin and cook, stirring until mixture has evaporated the liquid, but do not burn.
  • Step 3
    Spoon the mushroom mixture into a food processor and add the black beans. Process/Pulse until well combined but still chunky.
  • Step 4
    Spoon mixture into a boil and add goat cheese, if using. and bread crumbs. Add salt and pepper to taste.
  • Step 5
    Wet hands and for the mixture into 6 burgers. Mist both sides with nonstick cooking spray. Grill the burgers until crisp and heated through (this can be done in a non-stick skillet on the stove top). Serve the burgers on buns with lettuce, tomato, avocado and the salsa.
