Guasacaca relish makes and excellent substitute of guacamole sauce. In Venezuela it's widly used as a sauce for Salisbury steaks, meats, barbacued beef, potatoes, and yams.

Ingredients

  • 1 pound ground beef
  • - salt
  • - black pepper
  • 2 tablespoons dijon mustard
  • 1 tablespoon cilantro, fresh, chopped
  • 1 clove garlic, chopped
  • 1 - egg
  • 1/2 cup bread crumbs, dry
  • 1 teaspoon worcestershire sauce
  • 4 medium hamburger rolls
  • GUASACACA RELISH:
  • 1/2 - + 1/2 avocado, seeded and peeled
  • 1 medium onion
  • 1 - green bell pepper
  • 2 - green onions
  • 1 teaspoon fresh parsley or cilantro, chopped
  • 1 medium tomato
  • 1/4 cup vinegar
  • 1/4 cup olive oil, light
  • - salt and pepper, to taste
  • 1 - hot chili pepper (optional)

How To Make guasacaca burgers

  • Step 1
    Preheat the grill to medium-high heat. Mix all ingredients except rolls. Form the ground beef into 4 equal-sized patties and sprinkle with the salt and pepper.
  • Step 2
    Cook the patties on the grill for 10 to 12 minutes, or until no pink remains in the center, turning once halfway through the grilling.
  • Step 3
    GUASACACA RELISH: Meanwhile, dice the avocado and hand chop the first 6 guasacaca ingredientes. Add half of the oil and vinegar and thoroughly mix*.
  • Step 4
    Process to a puree the other 1/2 of the avocado with 3 tablesoons of the mixed ingredients. As you blend, add the rest of the oil and vinegar. Combine with the chopped ingredients and add salt & pepper to taste.
  • Step 5
    BRING TOGETHER: Bring together by topping the burgers with the guasacaca relish and any other ingredient of your choice.
  • Step 6
    *Note: 1. The mixture should be carefully done with a wooden spoon, and making sure you add the diced avocado as the last ingrediente in order to avoid texture darkening; to this end, place the avocado's large seed right smack in the middle of the mixing bowl!
  • Step 7
    2. The relish bowl should be placed in the fridge unitl ready to top burgers.
