Who would of ever thought to use blueberries in a burger recipe! Get ready to grill!

Ingredients

  • - 1/4th cup of fat free mayonnaise
  • - 2 tbsps of fresh chopped basil
  • - 1 tsp of lemon zest
  • - 1 pkg(6 oz or 1-1/4th cups)blueberries, divided
  • - 1 clove of garlic, minced
  • - 2 teaspoons of fresh lemon juice
  • - 1 -1/2 teaspoons of dijon mustard
  • - 1 pound of ground turkey(7 percent fat)
  • - 3 tbsps of bread crumbs(plain)
  • - 1/4th tsp salt
  • - 1/8th tsp ground black pepper
  • - 4 light multi grain english muffins(100 calories)
  • - 4 tomato slices
  • - 4 lettuce leaves

How To Make blueberry turkey burgers

  • Step 1
    Combine mayonnaise, basil, lemon zest, and half of the blueberries in a small bowl; mix well and reserve.
  • Step 2
    Combine remaining blueberries, garlic, lemon juice, and Dijon mustard in a bowl and mash well with a fork. Add ground turkey, bread crumbs, salt and pepper, mix until well combined.
  • Step 3
    Divide into 4 portions and form into 3 1/2 inch diameter patties.
  • Step 4
    Coat a grill pan with cooking spray and heat over medium high heat. Add patties and grill 5 to 6 minutes each side or until a thermometer inserted in the center registers 175 degrees.
  • Step 5
    To serve, place 1 tomato slice, 1 lettuce leaf and 1 turkey burger on bottom half of each English muffin(toasted)
  • Step 6
    Spread cut side of muffin tops with basil mayonnaise and place on burgers, serve right away.
