Ingredients
- - 1/4th cup of fat free mayonnaise
- - 2 tbsps of fresh chopped basil
- - 1 tsp of lemon zest
- - 1 pkg(6 oz or 1-1/4th cups)blueberries, divided
- - 1 clove of garlic, minced
- - 2 teaspoons of fresh lemon juice
- - 1 -1/2 teaspoons of dijon mustard
- - 1 pound of ground turkey(7 percent fat)
- - 3 tbsps of bread crumbs(plain)
- - 1/4th tsp salt
- - 1/8th tsp ground black pepper
- - 4 light multi grain english muffins(100 calories)
- - 4 tomato slices
- - 4 lettuce leaves
How To Make blueberry turkey burgers

Step 1Combine mayonnaise, basil, lemon zest, and half of the blueberries in a small bowl; mix well and reserve.

Step 2Combine remaining blueberries, garlic, lemon juice, and Dijon mustard in a bowl and mash well with a fork. Add ground turkey, bread crumbs, salt and pepper, mix until well combined.

Step 3Divide into 4 portions and form into 3 1/2 inch diameter patties.

Step 4Coat a grill pan with cooking spray and heat over medium high heat. Add patties and grill 5 to 6 minutes each side or until a thermometer inserted in the center registers 175 degrees.

Step 5To serve, place 1 tomato slice, 1 lettuce leaf and 1 turkey burger on bottom half of each English muffin(toasted)

Step 6Spread cut side of muffin tops with basil mayonnaise and place on burgers, serve right away.
