I wanted to try some bison and this is my creation.

Ingredients

  • 1 pound ground buffalo a.k.a.bison
  • 1/2 cup oatmeal, uncooked
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper (i use fresh cracked)
  • 1/4 teaspoon marmite (optional)
  • 1 tablespoon onion, minced
  • 1 tablespoon dried parsley
  • 1/2 cup beef broth, reduced sodium
  • 1/2 teaspoon unflavored gelatin
  • 1 clove garlic, minced

How To Make bison burgers

  • Step 1
    Dissolve gelatin into beef broth. Whisk in Marmite. Let sit for five minutes.
  • Step 2
    In a medium bowl, combine bison, oatmeal, salt, pepper, minced onion, garlic and parsley.
  • Step 3
    Pour gelatin mixture over meat. Stir to mix well. Shape into four burgers.
  • Step 4
    Set oven to broil. Place burgers on foil-lined broiler pan. Broil 7 minutes per side.
  • Step 5
    Notes: Marmite is a yeast extract from Australia. When used with beef/bison, it amps up the flavor. You can substitute one egg for the beef broth/gelatin mixture. I like to serve these topped with Swiss cheese and caramelized onions.
