These burgers are called Pljeskavica in Albania. It literally means 'to clap your hands' which describes how the patties are made. They can be grilled or fried and served on crusty rolls or in pita pockets. Traditionally they are served by spreading ajvar and kajmak on them and adding onions and pickles.

Ingredients
- FOR BURGERS:
- 1/2 pound ground beef
- 1/2 pound ground pork
- 1/2 pound ground veal (or lamb)
- 1/2 medium onion, grated or minced
- 3 tablespoons minced fresh parsley or dill
- 1 1/2 teaspoons ground coriander
- 1 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper, or to taste
- 1/2 teaspoon ground cumin
- 1 teaspoon baking soda
- 1/4 cup beef stock or water
- FOR SERVING:
- 1 medium onion, finely chopped
- 1 ripe tomato, finely chopped
- 1/4 cup chopped pickled peppers
- ajvar, optional
- kajmak, optional
- 4 crusty rolls or pita pockets
How To Make balkan burgers

Step 1Combine all burger ingredients in a bowl and mix well.

Step 2With wet hands, form 4 patties and refrigerate (covered) until ready to grill.

Step 3Place the chopped vegetables in bowls with spoons.

Step 4Preheat the grill to high. Grill the burgers until cooked through and golden brown, 4 to 6 minutes per side, turning with a spatula.

Step 5Serve the burgers on rolls topped with spoonfuls of onion, tomato, and pickled pepper.
