zucchini burger casserole

Simple ingredients and simple directions make this recipe -quick and easy. My husband does not like any vegetables- but he will eat the vegetables I make into other things that he eats without realizing it! lol[:)

Ingredients

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • 1 medium onion, chopped
  • 1 pound zucchini, sliced thin, unpeeled
  • 2 cups cooked rice
  • 2 cups cottage cheese
  • 10 ounces can cream of mushroom soup, undiluted
  • 1/2 teaspoon salt
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated parmesan cheese

How To Make zucchini burger casserole

  • Step 1
    Place beef, garlic powder and onion in a 2 -quart casserole. Microwave 5 minutes, stirring after 3 minutes Drain any fat.
  • Step 2
    Add zucchini, rice, cottage cheese, soup and salt. Mix well Sprinkle cheddar and parmesan cheeses over the top. Cover Microwave 8 minutes until bubbly. This also reheats nicely.
  • Step 3
    NOTE: If desired you can bake in regular oven at 350^ for 30-35 minutes.
